Rustic sourdough loaf
Lancaster, Pennsylvania · Est. 1987

The art of
slow bread.

We are a small bakery that believes in time. Grain milled the week we bake it. A starter older than our staff. Thirty-six hours of patience in every loaf — because the best things simply cannot be hurried.

Chapter One

Flour we mill ourselves

Whole grain from two farms within forty miles, ground fresh in our own mill each week. Flour this alive behaves differently — sweeter, more fragrant — and you taste it in the crumb.

Chapter Two

A thirty-six hour rise

Our sourdough ferments slowly and cold. The long wait is what gives the crust its depth and the interior its open, airy structure. No commercial yeast. No shortcuts. Ever.
